Rebecca Bridgefarmer is a registered dietitian who has worked with high school students, nursing students and patients receiving mental health services within treatment facilities. She received her bachelor's degree in dietetics from Texas Woman's University and her master's in nutrition from Abilene Christian University. She is building the dietetic internship program at East Texas A&M, where she will inspire students to become influential registered dietitians.

A Conversation with Rebecca

What do you like most about your career as a registered dietician?

I love learning about my students and seeing how I can tailor my lessons to meet their needs. I have always told my classes that many of the subjects they learn in school may never come up again, but nutrition will always be relevant. I enjoy witnessing their “aha” moments when they discover how improving their health can benefit them personally.

What do you like most about teaching at East Texas A&M?

I love the opportunity to inspire and support students as they develop a deeper understanding of all factors that affect our mental and physical health. The students who come through the Department of Health and Human Performance are here to make a difference in public health by promoting exercise, improving nutrition, and learning how to advocate for themselves to improve their quality of life. It’s a lot of fun to watch the journey! 

What internships or real-world experiences are available to students in your department or in the university?

Here in the Department of Health and Human Performance, we have many opportunities for students to get real-world experience! We have a public health internship and opportunities for graduate assistants, and we hope to add a dietetic internship to that list in 2025! 

How would you describe your teaching style?

I try to create a safe and comfortable environment where students are encouraged to ask questions and challenge ideas. I believe that students learn best when they can connect concepts to real-world experiences, so I try to incorporate that in all of my lessons. I love learning about the students, what they want to take away from a course, and any career goals they have so that I can tailor the lessons to them. 

What drew you to this particular field of study?

I personally saw how paying attention to what we put in our bodies can impact our mental and physical health. It made a huge impact on the trajectory of my life and I knew that I wanted to spend my career helping others discover the same thing.

If you weren’t a professor, what would you be doing?

I would LOVE to be a judge on a cooking show on Food Network or the Cooking Channel. That is the ultimate dream. Iron Chef America, call me.
